Recipes and Menus for Fun Tea Parties
Cinnamon Heart Shortbread Cookies


1 1/4 cups butter softened
1 cup icing sugar
2 1/4 cups all purpose flour
1 pkg. Cinnamon Hearts

Preheat oven to 325 F.
Cream butter and sugar until light.
Mix in flour a bit at a time. Stir in Cinnamon Hearts.

Form dough into balls or use heart shaped cutter.

Place on ungreased cookie sheet and bake for 15-17 minutes.

Or flatten balls to rounds. Bake 12-14 minutes.

Remove from sheets, sprinkle with icing sugar if you like
and let cool. These are perfect for classroom parties!


Instant Chai Tea Mix


Instant Chai tea mix. You can spice it up even further
by adding 1 teaspoon nutmeg and allspice, and 1/4
teaspoon white pepper. Makes 16 servings.
1 cup nonfat dry milk powder
1 cup powdered non-dairy creamer
1 cup French vanilla flavored powdered non-dairy creamer
2 1/2 cups white sugar
1- 1/2 cups unsweetened instant tea
2 teaspoons ground ginger
2 teaspoons ground cinnamon
1 teaspoon ground cloves
1 teaspoon ground cardamom

Directions
1 In a large bowl, combine milk powder, non-dairy
creamer, vanilla flavored creamer, sugar and
instant tea. Stir in ginger, cinnamon, cloves and cardamom. In a
blender or food processor, blend 1 cup at a time, until
mixture is the consistency of fine powder.
2 To serve: Stir 2 heaping tablespoons Chai tea mixture into a mug of hot water. Can also be chilled and served icy cold

Note:
You may choose to omit the French vanilla creamer, and
use 2 teaspoons vanilla extract instead. To do so, mix
the vanilla into the sugar, let it dry, then break the
sugar into small lumps. Follow the same procedure as above.

 

 

 


Easy Tea Sandwich

one jar Dickinson's onion /hot pepper relish
one 8 oz bar cream cheese.

Soften cream cheese, mix in entire jar of Dickinson's (which is a Smucker product) Spread gently on a firm bread, cut into whatever shapes you choose. This is also a delicious dip for veggies or Ryan's crackers.

It can be presented in many ways, such as rolled into pinwheels and sliced or with a tiny slice of olive or sweet pepper wisps on top of triangles.

 

 

Smoked Salmon with Sprouts on Endive


1 8oz cream cheese, softened - 1 green onion, minced

1 4oz package thinly sliced smoked salmon

1 4oz package fresh alfalfa sprouts - 1⁄4 cup sour cream

16 Belgian endive leaves (about 2 heads)

In a small bowl, combine cream cheese, sour cream, and green onion. Cover & chill.

Cut each slice of salmon into four equal pieces. Wrap cut salmon around small bunch of sprouts, leaving some sprouts sticking out of top.

Place each salmon roll on endive leaf.

Pipe or dollop cream cheese mixture evenly on each.

Refrigerate until ready to serve – makes 16


 

 

Chocolate Teddy Bears

2/3 cup butter or margarine
1 cup of sugar
2 teaspoons vanilla
2 eggs
2 1/2 cup all purpose flour
1/2 c. Hershey's cocoa
1/2 t. baking soda
1/4 t. salt
In a large mixer cream butter, sugar, and vanilla until light
and fluffy. Add eggs; blend well. Combine flour, cocoa, b. soda, and salt; gradually add to creamed mixture, blend thoroughly. Chill until dough is firm enough to handle.
Heat oven to 350.
To shape bears: For each cookie, form a portion of the dough
into 1 large ball for body (about 1 inch to 1 1/2 inch), 1 medium size
ball for head (3/4 inch), 2 smaller balls for ears, 1 tiny ball for nose,
and 4 tiny balls for paws (optional). On a large parchment lined cookie sheet, flatten large ball slightly for body. Attach med. ball for head by overlapping slightly onto body. Place balls for arms, legs, ears, and a tiny ball for nose.
If desired arrange other tiny balls on top of paws. With a wooden
toothpick draw mouth. (I also went back after and drew a pink
line for mouth-see picture). Bake 6-8 minutes. Can also decorate with
ribbon around bear's neck and I also filled in his eyes with
blue icing-see picture.
-About 12 dozen cookies


Fresh Apricot Scones


2 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
2 tablespoons sugar
1/3 cup butter, chilled
1/4 cup milk
2 eggs
1 cup diced fresh apricots
Milk
Sugar
Preheat oven to 450 degrees Fahrenheit.

Combine flour baking powder, salt, and 2 tablespoons sugar. Cut butter into flour mixture. Add 1/4 milk and eggs. Stir in apricots. Turn dough onto a lightly floured board and knead gently. Pat dough into a circle about 3/4" thick and cut as desired. Brush with remaining milk and sprinkle with remaining sugar. Bake 12 to 15 minutes until golden brown..

Waldorf Tea Sandwiches

2 cups shredded semi-tart apple, unpeeled
1 tablespoon lemon juice
2 ribs celery, very finely diced
1 cup chopped walnuts or pecans
1/2 cup mayonnaise
1/2 cup Extra Creamy Cool Whip
Cinnamon Raisin bread

Toss apples with lemon juice; stir in celery and nuts. Add mayonnaise and Cool Whip, stirring gently. Spread bread with apple mixture. Remove crusts from bread and cut as desired.

Christmas Chicken Salad for Afternoon Tea

1 cup chopped cooked chicken breast
3/4 cup diced mandarin oranges, well drained
1/2 cup dried cranberries
1/4 cup mayonnaise
1/4 cup sliced almonds

Combine all ingredients and chill at least one hour before serving to allow the flavors to marry
